Chapter 5 Mimaw's Fresh Apple Cake

My great-grandmother made the best Apple Cake. The recipe is very simple and it's too good to pass up and a classic Texas recipe.

Set oven at 350°

1/4 cup Wesson Oil
2 cups Sugar
1 tsp Vanilla
2 Eggs
1 tsp Salt
1 1/2 tsp Cinnamon
1/2 cup nuts (Optional)
3 cups Flour
3 cups raw apples

Blend (mix) first seven ingredients. Add flour and mix well. The batter will be thick and stiff. Then put in a standard baking pan and bake for 1 hour.

Glaze:

Juice of one orange and one lemon
Mix with 2 cups powdered sugar

Pour over cake while hot--Cool in the pan
